Combine honey, dijon mustard, ginger, salt, pepper, roasted garlic, balsamic vinegar, and extra virgin olive oil in a mason jar and shake well or whisk together in a mixing bowl until everything is well incorporated.
Notes
The ginger paste sold at the store works well in this application. If using fresh ginger, you can use 1/2 tablespoon. Make sure to mince it into the smallest pieces possible or mash it into a paste, if possible.
The same goes for garlic. If you're not using roasted garlic that can be easily mashed and incorporated into the vinaigrette, mince as finely as possible.
